Salad
- ½ small cabbage finely diced
- 1 large English cucumber finely diced
- 1 bunch green onions sliced
Chicken
- 1 pound boneless skinless chicken breast
- Juice of ½ lemon
- 1 /4 cup yogurt
- 2 tablespoon olive oil divided
- 1 tablespoon dijon mustard
- 2 cloves garlic pressed
- ½ teaspoon turmeric
- ½ teaspoon Kosher salt
Green Goddess Dressing
- Juice of ½ lemon
- ⅓ cup olive oil extra virgin
- 1 tablespoon rice vinegar
- 1 clove garlic
- ½ small shallot
- ½ cup fresh basil
- 1 cup spinach
- ½ medium avocado
- ¼ cup Greek yogurt
- ½ teaspoon salt
Cook the chicken: Marinade the chicken with the ingredients, keeping a tablespoon of oil for the skillet. Heat the oil in a skillet over medium-high heat. Cook the chicken until both sides are golden brown, about 5 minutes per side. Once cooked, remove from heat and slice into strips.
