Kodiak Cakes Chocolate Chip Protein Muffins (No Banana)

These healthy Kodiak Cakes chocolate chip protein muffins are easy, quick and are low in sugar. They are the best high protein breakfast muffins and are made without protein powder or banana and are a great healthy snack or quick breakfast!

  • Preheat oven to 350ºF. Spray muffin pan with nonstick cooking spray.
  • Add Kodiak Cakes mix to a large bowl and combine with the baking powder and cinnamon.
  • Combine milk, egg, vanilla extract and Greek yogurt.
  • Add wet ingredients to the dry ingredients. Stir the muffin batter until just combined.
  • Gently fold in the chocolate chips.
  • Use a large spoon to transfer the batter to the muffin pan or muffin liners and fill 12-14 muffin cups evenly, about ¾ full.
  • Bake for 16-18 minutes or until golden brown and inserted toothpick comes out clean. Cool muffins for 5 minutes in the muffin tin and then transfer to a wire rack to finish cooling.

Notes

  1. Do not over mix the Kodiak Cakes muffin batter as it can change the texture of the muffins.
  2. Only fill the muffin tin or the silicone muffin trays ¾ of the way otherwise they may spill over.
  3. Serving size: 1 muffin
  4. The kodiak cakes flapjack and waffle mix makes a delicious basic muffin recipe that is high in protein. Feel free to add more flavoring options like blueberries, strawberries, mashed banana, peanut butter, nuts and so much more!
