Garlic and Rosemary Roasted Potatoes
These rosemary garlic potatoes are soft on the inside and crunchy on the outside! They make the perfect side dish and you can use any type of potato that you have on hand.

- 3 pounds yellow potatoes
- 3 tablespoon olive oil
- 5 cloves garlic minced
- 2 teaspoon dried rosemary
- 2 teaspoon salt
- ¼ cup Parmesan cheese grated
Half the yellow potatoes
Place potatoes, olive oil, garlic, rosemary, salt into bowl and toss to mix
Place the mix to the crockpot
Set the crockpot on low heat and cook for 4-5 hrs or on high heat for 2-3 hrs
Sprinkle Parmesan cheese
Crispy Potato: Place cut potato edge on the sides of the crockpot, to get a crispy layer on the outside.
Mix it Up: feel free to add your favorite seasoning to the mix. You can also add different toppings like sour cream or parsley.
